Standard terms / measurements used in cocktail recipes: shot = 45ml = 3tbsp; pony = ¾ shot = 30ml = 2tbsp; dash = a few drops; splash = slightly more than a dash; top up = fill to the top of a glass.
The recipe term ‘parts’ refers to the fraction of the glass size that the cocktail is to be served in e.g. 2 parts vodka, 1 part rum and 1 part orange juice means the glass should be ½ vodka, ¼ rum and ¼ orange juice.
Even slightly altering the ingredient quantities (either more or less) of a cocktail recipe can cause a big change in its taste.
The most common mistake when making a cocktail is to increase the quantity of one of the ingredients.
Some cocktail shakers have a small cup on each end (one 20ml and one 40ml) with ml increments etched on the side; these make it much easier to get recipe measurements correct.
Common spirits / liqueurs used to make cocktails include: amaretto; brandy; coffee liqueur; Curacao; gin; Irish cream; rum; schnapps; tequila; triple sec; vodka; whisky.
Avoid using low quality spirit / liqueur brands; the cheap taste being noticeable even when mixed with other ingredients.
Common mixers used to make cocktails include: coffee; coke; cranberry juice; grapefruit juice; grenadine; lemon-lime soda; lime juice; milk; mint; orange juice; pineapple juice; soda water; sour mix; sugar syrup; tomato juice; tonic water.
Sugar syrup is an ingredient required in some cocktail recipes; you can normally only buy it from specialist drinks outlets, however, it’s easy to make yourself.
To make sugar syrup: add 4 tablespoons of water and 4 tablespoons of caster sugar into a small saucepan; stir over a low heat until the sugar has dissolved; bring to the boil; continue to boil, without stirring, for 90 seconds; remove from the heat; set aside to cool; store in a covered container in the fridge.
To make ‘sour mix’, follow the ‘sugar syrup’ recipe but stir into the sauce pan 4 tablespoons of lemon juice and 4 tablespoons of lime juice after it’s been removed from the heat.
Cocktails including cream or eggs should be shaken for at least 30 seconds.
Whenever possible, use real fruit instead of fruit juices.
If using fruit juices, only use fresh ones (especially for lemon and lime); avoiding artificial and concentrated versions.
Put fruit in a blender before mixing it with other ingredients.
To extract the most possible flavour from fresh ingredients, crush them between two up facing spoons.
When making cocktails, always use freshly made ice.
Using too much ice waters down a cocktail and results in a loss of flavour.
Crushed ice is essential for some cocktails, you can: buy it from a shop already crushed; use an electric ice crusher; wrap some ice in a towel and use a hammer or rolling pin to crush it.

There are 3 ways of making cocktails: building; shaking; layering.
If a cocktail recipe refers to 'building', it means the cocktail should be made by pouring all of the ingredients straight into the glass (i.e. without using a cocktail shaker).
The point of shaking cocktails is to breakdown, combine and cool the ingredients.
To shake cocktails: place 5 or 6 ice cubes in the shaker; add the ingredients to the shaker; shake for 10-15 seconds; pour into a glass.
Don’t overfill the cocktail shaker; the ingredients need space to move around.
Shake as hard as you can.
The more the ingredients are mixed together, the better the taste of the cocktail.
Only your hands and the cocktail shaker should be moving; not your whole body.
Try humming a tune and shaking to the beat.
Some cocktails need to be shaken with ice despite not being served with it.
‘Straining’ is the process of separating the cocktail from the ice.
Most cocktail shakers incorporate a built-in strainer; making it easy to separate the cocktail from the ice.
If a cocktail recipe says that a drink should be strained, only use whole ice cubes in the shaker, not crushed ice.
If a cocktail recipe specifically says that a drink is required to be shaken with crushed ice, it should be served unstrained.
‘Layering’ means to float one or more ingredients on top of each other.
To layer: pour the first liqueur into the glass; rest a spoon against the inside of the glass, on the surface of the liqueur; slowly pour the second liqueur over the rounded (back) part of the spoon; allow the second liqueur to run down the spoon and spread itself over the first liqueur.
The slower you layer liqueurs, the better the chance of them being separated.
Some liqueur combinations layer much better than others; some won’t layer at all.
The basic principle of successful layering is that the ‘lighter’ liqueur should always be poured on top of the ‘heavier’ liqueur.
As a rule of thumb, the greater the difference in weight between two layers, the easier it is to keep those layers separated.
To improve your layering, learn the approximate weight of popular liqueurs.

Garnishes are the extras with which you can decorate a cocktail; they should act as a visual indicator of what is to be expected in terms of flavour e.g. a slice of lemon indicates a sharp, crisp cocktail, whereas a cherry indicates a sweet cocktail.
To add salt to the rim of a glass, moisten the edge with a wedge of lime and then dip the upturned glass into a saucer of salt.
To add sugar, chocolate or coconut to the rim of a glass, moisten the edge with a damp sponge and then dip the upturned glass into a saucer of the desired ingredient.
